Awesome Tuna Melt Sandwich
My Mom made the most awesome tasting Tuna Melt Sandwiches! She called them “Gooey Burgers” and made them in the oven on broil. They were just so good! Here’s a version of her recipe – only made in a skillet instead of the broiler.
Makes 4 sandwiches
Ingredients:
- 2 regular sized cans Tuna, drained
- 1 Onion, diced
- 1/2-1 stalk Celery, diced
- 1 clove Garlic, minced
- 1 tablespoon fresh Parsley, chopped
- 4 tablespoons Mayonnaise
- 3 tablespoons Olive Oil
- 4 slices of your favorite Cheese
- 8 slices of your favorite Bread
- Butter, softened
- Salt and Pepper, to taste
How to Make It:
- Drain water from tuna, and put tuna in a medium sized bowl
- Add chopped onion, celery, parsley, minced garlic and mayonnaise.
- Mix well, then salt and pepper to taste.
- In a non-stick skillet, add 1 tablespoon olive oil and heat skillet to a medium heat (too hot, and the bread will burn).
- Spread butter on one side of bread, then place bread (buttered side down) into hot skillet.
- Spoon about 2-3 tablespoons of the tuna salad mixture onto bread while the bread is browning, and top with a slice of cheese.
- Butter another slice of bread and place non-buttered side on top of tuna.
- Use a spatula to turn the tuna melt over and then brown the other side of the bread until it is golden brown and cheese has melted.
- Allow the tuna melt sandwich to cool slightly, then serve!
Mom also liked adding a sliced tomato to the sandwiches for extra flavor. Yum!
